A place we consider a privilege to farm.

Mabellae Farm sits on 17 acres of rich basalt soil in the heart of the Southern Highlands — a hilltop property of breathtaking beauty, charm and character, on the land of the Gundungurra people.

The story

We didn't arrive here as farmers. We arrived as a family overwhelmed by the busyness of a previous life, drawn to the Southern Highlands by something we couldn't quite name — and found it here, on this hill, in this soil.

What began as a vision for a haven has become something larger and more purposeful than we imagined. Mabellae Farm is now a working regenerative and biodynamic property, and the home of The Still Room. Every herb we grow, every preparation we make, begins with the health of this land.

What we've built

Since arriving, we have worked steadily to restore and reimagine every part of the property.

The waterways We've created a riparian corridor surrounding our dams and waterways, and enhanced the dams themselves into clean, biodiverse ecosystems. Water is the lifeblood of any farm — we treat it accordingly.

The paddocks We've fenced the property into smaller paddocks to practice cell grazing — moving animals through in rotation so the land has time to rest, recover, and regenerate between grazing periods.

The gardens and orchards We inherited an old orchard and have regenerated it alongside our paddocks and gardens. On the hilltop we've established Kitchen Gardens and new orchards using regenerative practices — growing food for the table as well as the farm.

The herb enterprise Our greenhouse, drying racks, potting shed, and still room form the heart of The Still Room — where the harvest is transformed into dried herbs, teas, apothecary preparations, and living plants.

How we farm

We follow regenerative and biodynamic principles. All biodynamic farms are organic, but we go further — emphasising biodiversity, crop rotation, careful greenhouse management, animal welfare, and above all, soil fertility.

Restoring and maintaining the delicate balance of our soils is our priority. Nutrient-dense soil produces nutrient-dense food and medicine. Everything we do on this farm is in service of that understanding.

We have achieved a great deal. There is still so much to do, to learn, and — through The Still Room School — to teach.
